Black Pearl Oyster Powder

These dried mushrooms are harvested from fruiting blocks composed of hardwood oak sawdust and soy hulls and then low-temperature dried to preserve heat-sensitive nutrients.

Black Pearl Oyster is ~90% water by weight. Drying reduces this to <6%. Therefore, when cooking with Black Pearl powder, it is important to remember that the rehydrated weight of your mushroom is about ten times that of the purchased dry weight. If a recipe calls for 100 grams of Black Pearl, 10 grams of powder will be equivalent. These numbers come from current production estimates, and we are in the process of measuring exact mass change upon rehydration.
