These dried mushrooms are harvested from fruiting blocks composed of hardwood oak sawdust and soy hulls and then low-temperature dried to preserve heat-sensitive nutrients.

Black Pearl caps are ~94% water by weight. Drying reduces this to <6%. Therefore, when cooking with Black Pearl caps, it is important to remember that the rehydrated weight of your mushroom is about ten times that of the purchased dry weight. If a recipe calls for 100 grams of fresh caps, 10 grams of dry caps will be equivalent. These numbers come from current production estimates, and we are in the process of measuring exact mass change upon rehydration.
